The United States has rising childhood obesity and schools deal with kids who are picky. Through innovative school gardens and kid taste testing food, entrepreneurs across the nation are getting children to eat vegetables at school and love it.

The rapid development of emerging economies across Asia and Africa is lifting hundreds of millions of people out of poverty - but there is much debate as to how to best structure this growth. If these economies evolve in the same way as in the West - with unchecked, excessive resource consumption and heavy pollution - the planet may be on the fast track to disaster. Earthrise explores how these nations can grow sustainably using improved, eco-conscious technologies like renewable energy and eco-friendly farming practices.

Copenhagen is a highly livable city, thanks to policies that focus on making streets safe and convenient to walk. The bigger the city, the worse it is to design urban spaces only with cars in mind, says planner and architect Jan Gehl. His top advice is to gather data about people and their movements, making pedestrians as visible in city planning as automobile traffic.

Over two million baby boomers own their own companies, and with retirement looming, the government stepped in with a solution. A portion of a 2018 federal bill included language that will push the Small Business Administration to help baby boomers transition ownership of their companies to their employees if they wish. This will mitigate job loss often associated with a retiring business owner putting the company up for sale. The first Human Library emerged in 2000 in Copenhagen, and has since exploded in popularity to the point of operating chapters in more than 70 different countries. The concept is that readers should not judge a book by its cover, so in this library, actual people are the books available to read with titles like "Polyamorous", "Soldier (PTSD)", and "Refugee". The 30-minute "reading sessions" (face-to-face conversations) allow people to learn in a judgement-free zone and put a real person behind the story they are hearing.

Activists in Berkeley, California, are filling in what they say is a gap in homeless services during the coronavirus outbreak. Volunteers are safely delivering food and other supplies to those without shelter.

The Women’s Collective is a nonprofit that works with more than 10,000 subsistence farmers in the Indian state of Tamil Nadu to promote food security using millets, a crop resilient to drought and climate change. For Pavitra, one of those farmers, she began cultivating the ancient grains in 2015 and now has more than enough food to feed her family year-round. However, there’s a lack of public investment in millet production and machinery. And there’s no unified effort to create demand for millets: Some state governments lead the charge and in other states, it’s led by grassroots organizations.

After years of drought and land-clearing that left Niger with few trees left, the country now boasts about 200 million trees, which have mostly been reestablished naturally. While the effects of climate change could threaten the future of these trees, this method has also increased crop yields in villages. This model of letting trees grow back with little human influence could be implemented in other countries.

Cornerstone Baptist Church is spearheading the redevelopment of Struggs’ Cornerstone Heights Neighborhood. In 2019, the church opened a laundromat and bike shop and last year the Cornerstone Community Kitchen began serving free hot meals to locals experiencing homelessness. The Church is soon launching a community market where local residents can access fresh, affordable food.
